Michelin-starred Aulis Phuket is Simon Rogan’s intimate 15 seat chef’s table at the beautiful Iniala Beach House on Natai Beach. The multi course tasting menu explores hyper local ingredients, bringing together Simon’s core values with the energy and abundance of Thai produce, and offers guests a behind the scenes immersion into his philosophies, centred on a deep respect for seasonality and local produce. The team at Aulis Phuket works closely with farmers, growers and foragers across Thailand, identifying native ingredients and letting them shine. The emphasis is on building lasting relationships with those who know the land best. This close collaboration allows the chefs to follow the rhythm of the seasons, rather than leading with fixed ideas and is a constant process of dialogue, discovery and refinement.

Simon Rogan MBE is an internationally renowned, award-winning chef, he is recognised as one of the

pioneers of the farm-to-table movement. Simon’s journey began in 2002 when, together with his partner Penny, he opened L’Enclume in Cartmel, UK. The restaurant now holds three Michelin Stars and one Michelin Green Star. Over the years, Simon’s portfolio of restaurants expanded across the UK,

Malta, Hong Kong and Thailand, collectively holding nine Michelin Stars and two Michelin Green Stars. The first Aulis opened in 2016 in Cartmel as a small chef’s table and development kitchen. Following this, Aulis London opened in 2017 and Aulis Hong Kong in 2019. With its launch in December 2023, Aulis Phuket invites guests to experience the latest interpretation of Aulis.
